Spicy nachos topped with Manchego
Ingredients
for 4 person
200 g | tortilla chips |
1 | spring onion incl. green part, cut into rings |
1 tsp | sambal oelek |
100 g | Manchego, coarsely grated |
½ bunch | coriander, torn into pieces |
1 | avocado, cut into pieces |
1 tbsp | lime juice |
½ tsp | sambal oelek |
1 pinch | salt |
a little | pepper |
How it's done
Nachos
Place the tortilla chips on a tray lined with baking paper, top with the onions and sambal oelek. Sprinkle the Manchego over the top.
Bake for approx. 5 mins. in the upper half of an oven preheated to 220°C, remove from the oven. Sprinkle with coriander.
Guacamole
Mash the avocado with a fork, add the lime juice and sambal oelek, season. Serve with the nachos.
