Club sandwich
Ingredients
for 8 pieces
| 8 slice | bacon |
| 2 | chicken breasts (each approx. 180 g) |
| ½ tsp | paprika |
| ¼ tsp | salt |
| 4 | fresh eggs |
| 125 g | cream cheese, plain |
| 2 tbsp | coarse-grain mustard |
| 12 slice | toast bread, roasted |
| 2 | tomatoes, in slices |
| ½ | iceberg lettuce, whole leaves |
How it's done
To prepare
Preheat the oven to 60 °C. Without adding any oil, gently fry the bacon in a non-stick frying pan until crispy. Remove, drain on kitchen paper, keep warm. Fry the chicken breasts in the same pan over a medium heat for approx. 4 mins. on each side. Remove, season, cut into slices and keep warm. Heat the clarified butter in the same pan. Crack the eggs one at a time, slide into the pan, fry for approx. 5 mins.
Club sandwich
Mix the cream cheese with the mustard, spread on one side of the toast. Top 4 slices of toast with lettuce, chicken and tomatoes, then add another slice of toast. Top with the fried eggs and bacon, cover with the remaining slices of toast, press down gently. Cut the sandwiches in half diagonally, serve.
