Beetroot pralines with macadamia nuts

Ingredients

150 g boiled beets, diced
2 ½ tbsp cane sugar
1 tbsp water
50 g pitted prunes, finely chopped
300 g macadamia nuts, finely chopped

How it's done

Puree the beetroot, sugar and water in a pan, bring to the boil and then simmer for approx. 3 mins. while stirring. Add the plums, continue to simmer for approx. 5 mins., leave to cool. Combine the mixture with 200 g of the nuts. With wet hands, shape 20 balls and roll them in the remaining nuts.
