Kumquat champagne

Ingredients

for 4 person

Kumquats
1 dl water
kumquats *-*
2 tbsp sugar
1 sprig thyme
Cocktail
4 dl champagne (e.g. Veuve Clicquot Rosé brut, chilled)
4 sprig thyme

How it's done

Kumquats

Place the water, sugar, kumquats and thyme in a pan and bring to the boil. Reduce the heat, simmer for approx. 5 mins., allow to cool, remove the thyme.

Cocktail

Divide the kumquats and juice between the glasses just before serving, pour in the champagne. Place a sprig of thyme in each glass.
