Rösti muffins
Ingredients
for 12 pieces
600 g | waxy potatoes, cooked in their skins day-old, coarsely grated |
3 | eggs |
150 g | tangy Gruyère, coarsely grated |
¾ tsp | salt |
a little | pepper |
12 slice | bacon |
How it's done
Muffins
Mix together the potatoes, eggs and cheese, season. Transfer the potato mixture to the prepared muffin tin.
Roll up the rashers of bacon and place on top of each muffin.
To bake
Approx. 25 mins. in the centre of an oven preheated to 220°C. Remove, allow to cool slightly on a rack, remove from the tin.
