Rösti muffins

Instead of wide and flat, these rösti come in muffin form. The rolled rasher of bacon adds the perfect finishing touch to this deliciously cheesy treat.

Ingredients

for 12 pieces

Muffins
600 g waxy potatoes, cooked in their skins day-old, coarsely grated
eggs
150 g tangy Gruyère, coarsely grated
¾ tsp salt
a little  pepper
12 slice bacon

How it's done

Muffins

Mix together the potatoes, eggs and cheese, season. Transfer the potato mixture to the prepared muffin tin.

Roll up the rashers of bacon and place on top of each muffin.

To bake

Approx. 25 mins. in the centre of an oven preheated to 220°C. Remove, allow to cool slightly on a rack, remove from the tin.
