Refreshing exotic fruit salad with elderflower zabaglione
Ingredients
for 4 person
2 | kiwis, cut into cubes |
½ | pineapple, cut into cubes |
1 | banana, halved, cut into slices approx. 1 cm wide |
5 tbsp | elderflower syrup |
4 | fresh egg yolks |
1 dl | water |
How it's done
Place all the fruit in a bowl, add 2 1/2 tbsp of syrup, mix and divide the fruit into glasses. In a thin-sided bowl, combine the rest of the syrup with the egg yolks and water. Suspend the bowl over a gently simmering bain-marie; the bowl must not touch the water. Using the whisk on a hand mixer, whisk for approx. 6 mins. until the zabaglione is light and fluffy and traces form when it is stirred. Remove the bowl from the heat, briefly continue whisking, pour the mixture into the glasses, serve immediately.
