Plaice and avocado satay with lemon balm oil
Ingredients
for 4 person
| 2 | plaice fillets (MSC) (approx. 80 g each), cut into strips approx. 2 cm wide |
| 1 | avocado, not too soft, cut into 3 cm pieces |
| ¼ tsp | salt |
| 8 | wooden skewers |
| oil, for frying |
| 3 tbsp | olive oil |
| 1 tbsp | lemon juice |
| ½ bunch | lemon balm, roughly chopped |
| 1 pinch | sugar |
| 2 pinch | salt |
| a little | pepper |
How it's done
Satay
Salt the fish and avocado, skewer the fish and avocado to create a wave pattern, brush with oil.
Charcoal/gas/electric grill: Grill the skewers all over for approx. 6 mins. over/on a medium heat.
Lemon balm oil
Puree all the ingredients or crush them using a mortar and pestle.
Drizzle the lemon balm oil over the plaice and avocado satay, serve the remainder of the oil alongside.
