Plaice and avocado satay with lemon balm oil

Ingredients

for 4 person

Satay
plaice fillets (MSC) (approx. 80 g each), cut into strips approx. 2 cm wide
avocado, not too soft, cut into 3 cm pieces
¼ tsp salt
wooden skewers
  oil, for frying
Lemon balm oil
3 tbsp olive oil
1 tbsp lemon juice
½ bunch lemon balm, roughly chopped
1 pinch sugar
2 pinch salt
a little  pepper

How it's done

Satay

Salt the fish and avocado, skewer the fish and avocado to create a wave pattern, brush with oil.

Charcoal/gas/electric grill: Grill the skewers all over for approx. 6 mins. over/on a medium heat.

Lemon balm oil

Puree all the ingredients or crush them using a mortar and pestle.

Drizzle the lemon balm oil over the plaice and avocado satay, serve the remainder of the oil alongside.
