Crispy aubergine burgers with feta filling
Ingredients
for 4 pieces
| 700 g | aubergines, halved lengthwise |
| 2 tbsp | olive oil |
| 150 g | panko breadcrumbs |
| 1 tbsp | white flour |
| 2 | fresh eggs |
| ½ | lemons, the whole juice |
| ½ bunch | flat-leaf parsley, finely chopped |
| 50 g | feta, cut into 4 pieces |
| 2 tbsp | olive oil |
How it's done
Aubergines
Lightly score the cut sides of the aubergines several times in a criss-cross pattern, transfer to a baking tray lined with baking paper, drizzle with the oil. Remove, scoop the flesh from the skin using a spoon, place in a bowl.
To roast
Approx. 30 mins. in the centre of an oven preheated to 200 °C. Remove, scrape out the flesh using a spoon, place in a bowl.
Aubergine mixture
Add the breadcrumbs and all the other ingredients up to and including the parsley, mix well. Cover the mixture and leave to stand for approx. 20 mins.
Burgers
Divide the aubergine mixture into 4 portions. Wrap each piece of feta in a portion of the aubergine mixture, shape into a burger patty.
To fry
Heat the oil in a wide non-stick frying pan. Reduce the heat, fry the burgers over a medium heat for approx. 5 mins. on each side.
