Chocolate mousse with balsamic strawberries

Dark chocolate and strawberries are a heavenly flavour combination. It’s even better when the strawberries are marinated in good balsamic, the chocolate is blended into a creamy chocolate mousse and the whole thing is topped off with mint. Your guests won't want to leave. And best of all, the individual components of the dessert can all be easily prepared in advance.

Ingredients

for 4 person

Chocolate mousse
200 g chocolate (64% cocoa), finely chopped
400 g silken tofu
Strawberries
300 g strawberries, quartered
2 tbsp balsamic vinegar
1 tbsp sugar, as desired
To serve
2 dl full cream (see note)
1 tbsp balsamic vinegar
2 sprig peppermint

How it's done

Chocolate mousse

Place the chocolate in a thin-sided bowl, melt over a gently simmering bain-marie, stir until smooth. Stir in the tofu, puree with a handheld blender until smooth. Cover and leave the chocolate mousse to set in the fridge for at least 2 hrs. or overnight (see note).

Strawberries

Mix the strawberries, balsamic and sugar.

To serve

Whip the cream until stiff, plate up together with the chocolate mousse and the strawberries. Drizzle with the balsamic, garnish with the mint.
