Pasta with ham and burrata
Ingredients
for 4 people
| 400 g | pasta (e.g. Rigatoni) |
| salted water, boiling |
| 90 g | cured ham in slices |
| ½ tbsp | olive oil |
| 2 | garlic cloves, squeezed |
| 150 g | burrata piccola |
| 2 pinches | nutmeg |
| a little | pepper |
| salt, to taste |
| 1 bunch | parsley, finely chopped |
How it's done
Pasta
Cook the pasta in boiling salted water until al dente. Drain the pasta, retaining approx. 150 ml of the cooking water, set aside.
Ham
Without adding any oil, gently fry the cured ham in a non-stick frying pan until crispy. Remove, drain on kitchen paper. Wipe the cooking fat from the pan, reduce the heat.
Sauce
Heat the oil in the same pan. Add the garlic, sauté for approx. 2 mins. Remove, add to the reserved cooking water along with half of the burratas, season, puree. Mix the sauce with the pasta in the pan, heat through, season with salt.
To serve
Roughly chop the cured ham, mix into the pasta along with the parsley, plate up. Tear the remaining burratas, scatter on top of the pasta.
