Yogurt with grated frozen banana

We’re familiar with desserts made with frozen bananas. But grated ice-cold using a rösti grater? The result is delicate, snow-like banana flakes that gently melt on top of the creamy yoghurt – I think the texture is absolutely fascinating! The whole thing is rounded off with caramelized honey-salted almonds and roasted peanuts, which provide a distinct contrast in texture and balance out the dessert with a subtle salty note.

Ingredients

for 4 portions

To freeze the bananas
ripe bananas
To serve
600 g plain greek yoghurt
3 tbsp peanut cream
2 tbsp liquid honey
100 g Almond & Peanut Mix (Honey & Salt)

How it's done

To freeze the bananas

Peel the bananas, place them in a freezer bag, seal well, freeze for approx. 8 hrs. or overnight.

To serve

Spoon the yoghurt into small bowls. Using a rösti grater, grate the frozen bananas over the yoghurt. Top with the peanut butter, drizzle with the honey. Roughly chop the nuts, sprinkle on top.
