Grilled apricots with ricotta

Time for the fruit to hit the grill! Apricots taste wonderfully sweet and sour, and together with the aromatic rosemary and roasted pine nuts, this summer highlight will make a perfect starter or dessert – it doesn’t have to be one or the other!

Ingredients

for 4 portions

Apricots
750 g apricots, halved, pitted
1 tbsp olive oil
To serve
250 g ricotta
2 tbsp forest honey
2 tbsp pine nuts, roasted
2 sprig rosemary, needles removed
½ tsp sea salt

How it's done

Apricots

Mix the apricots and oil in a bowl.

Charcoal/gas/electric grill

With the lid down, grill the apricots over/on a medium heat (approx. 200 °C) for approx. 3 mins. on each side.

To serve

Plate up the ricotta, top with the apricots. Drizzle with the honey, sprinkle with the pine nuts, rosemary and fleur de sel.
