Grilled apricots with ricotta
Ingredients
for 4 portions
| 750 g | apricots, halved, pitted |
| 1 tbsp | olive oil |
| 250 g | ricotta |
| 2 tbsp | forest honey |
| 2 tbsp | pine nuts, roasted |
| 2 sprig | rosemary, needles removed |
| ½ tsp | sea salt |
How it's done
Apricots
Mix the apricots and oil in a bowl.
Charcoal/gas/electric grill
With the lid down, grill the apricots over/on a medium heat (approx. 200 °C) for approx. 3 mins. on each side.
To serve
Plate up the ricotta, top with the apricots. Drizzle with the honey, sprinkle with the pine nuts, rosemary and fleur de sel.
