Pizza with potatoes and onion
Ingredients
for 4 person
| 500 g | white flour |
| 2 tsp | salt |
| ½ cube | yeast (approx. 20 g), crumbled |
| 3 ¼ dl | water |
| 1 tbsp | olive oil |
| 3 tbsp | durum wheat semolina |
| 210 g | tomato sauce for pizza |
| 4 sprig | oregano, finely chopped |
| 1 | red onion, cut into thin rings |
| 150 g | waxy potatoes, cut lengthwise into slices approx. 2 mm thick |
| 1 tbsp | olive oil |
| 1 tin | anchovy (approx. 30 g), rinsed, drained |
| 150 g | mozzarella, torn into pieces |
How it's done
Dough
Mix the flour, salt and yeast in a bowl. Add the water and oil, mix and knead to form a soft, smooth dough. Cover and leave to rise at room temperature for approx. 1½ hrs. until doubled in size.
To shape
Halve the dough, shape into two balls on a lightly floured surface, cover and leave to rise again for approx. 1 hr.
Pizza
Place a baking tray in the cold oven, preheat the oven to 240 °C. Place the balls of dough on a little durum wheat semolina, shape from the inside out into a circle (approx. 30 cm in diameter), making sure not to flatten the edges. Place each pizza base on a sheet of baking paper.
Topping
Mix the tomato sauce and oregano, spread over the pizza bases. Add the onion, potatoes and oil to a bowl, mix, spread on top of the pizzas along with the sardines.
To bake
Carefully slide one pizza (incl. baking paper) onto the hot baking tray. Bake for approx. 10 mins. on the bottom shelf of the preheated oven. Remove, top with half of the mozzarella, return to the oven for approx. 10 mins. Remove, bake the second pizza in the same way.
