Cocktail

½	peach, cut into wedges
5 cl	amaretto
1 ½ tbsp	lemon juice
1 tsp	sugar
some	ice cubes

Sugar rim

½ tbsp

sugar

To serve

some	ice cubes
1 dl	sparkling mineral water
1	wooden skewer

How it's done

Cocktail

Set aside one slice of peach. Cut the remaining slices into pieces, place them in the shaker, crush with the muddler. Add the amaretto and all the other ingredients up to and including several ice cubes, shake well for approx. 30 secs.

Sugar rim

Pour the sugar into a shallow dish. Moisten the rim of the glass with the reserved peach slice, then dip into the sugar.

To serve

Fill the glass half full with ice cubes. Pour the cocktail through a fine sieve, top up with mineral water. Thread the peach slice onto the skewer, use to decorate the cocktail.
