Plum & chocolate cake
Ingredients
for 12 pieces
| 300 g | white flour |
| 20 g | cocoa powder |
| 120 g | sugar |
| 1 pinch | salt |
| 200 g | butter, cold, cut into pieces |
| 1 | egg, beaten |
| 50 g | dark chocolate, coarsely chopped |
| 500 g | plums, cut into approx. 2 cm pieces |
| 360 g | plain yoghurt |
| 200 g | double cream cheese (e.g. Filona) |
| 20 g | Maizena cornflour |
| 60 g | sugar |
| 1 parcel | vanilla sugar |
| 1 | egg |
| a little | cocoa powder |
How it's done
Dough
In a bowl, mix the flour with all the other ingredients up to and including the salt. Add the butter and rub together using your hands to form an even, crumbly mixture. Add the egg, mix quickly to form a soft dough – do not knead. Divide the dough in half, mix the chocolate into one half, chill. Spread the remainder of the dough over the prepared base, press down firmly, prick all over with a fork, cover and chill for approx. 30 mins.
Filling
Arrange the plums on top of the dough base. Place the yoghurt in a bowl with all the remaining ingredients, mix well, spread on top of the plums. Tear apart the chilled chocolate dough by hand, spread on top as a crumble.
To bake
Approx. 1 hr. in the lower half of an oven preheated to 180 °C. Remove from the oven, allow to cool slightly, remove the tin frame, leave to cool on a rack. Dust the cake with a little cocoa powder.
