Kefir pancakes with blueberries
Ingredients
for 2 person
| 100 g | brown flour |
| 3 tbsp | sugar |
| 2 tsp | baking powder |
| 2 pinch | salt |
| 180 g | kefir, plain |
| 1 | egg, beaten |
| 2 tbsp | water |
| clarified butter for frying | |
| 125 g | blueberries |
| 125 g | blueberries, cut in half |
| 1 tsp | sugar |
How it's done
Batter
Empty the flour into a bowl along with all the other ingredients up to and including the salt, mix and make a well in the centre. Mix the kefir, egg and water, gradually pour into the well while whisking, continue whisking until the batter is smooth.
Pancakes
Preheat the oven to 60 °C, warm the platter and plates. Heat a little clarified butter in a non-stick frying pan. Reduce the heat, pour the batter into the pan in batches to make pancakes, each approx. 7 cm in diameter. Sprinkle the blueberries over the pancakes and press down gently with a spatula. Once the undersides of the pancakes are cooked and no longer stick to the pan, flip them, cook for approx. 1 min. Remove from the pan, keep warm, prepare the remaining pancakes in the same way.
To serve
Mix the blueberries and sugar in a bowl, plate up with the pancakes.
