Roasted courgettes with feta and pistachios
Ingredients
for 4 person
| 400 g | courgettes, halved lengthwise, scored in a criss-cross pattern |
| 1 tbsp | olive oil |
| ½ tsp | salt |
| 1 tbsp | olive oil |
| 1 | organic lemon, grated zest and 2 tbsp of juice |
| 1 tbsp | white almond cream |
| 1 tbsp | water |
| ¼ tsp | salt |
| a little | pepper |
| 50 g | salted, roasted pistachios, coarsely chopped |
| 200 g | feta, roughly crumbled |
| 100 g | rocket, roughly chopped |
| 1 bunch | basil, roughly chopped |
How it's done
Courgettes
Cut the courgettes diagonally into approx. 3 cm pieces. Heat the oil in a frying pan. Add the courgettes, stir fry for approx. 5 mins., season with salt.
Dressing
Place the oil in a small bowl along with all the other ingredients up to and including the pepper, mix well.
Topping
Place the pistachios and all the remaining ingredients in a bowl with the courgettes, mix, drizzle with the dressing.
