Hibiscus granita
Ingredients
for 4 person
| 5 dl | water |
| 70 g | sugar |
| 4 bag | hibiscus tea |
| 1 | organic lime, grated zest and the juice |
| 150 g | plain greek yoghurt |
| 4 sprig | peppermint |
How it's done
Tea
Bring the water and sugar to the boil in a pan. Remove the pan from the heat, add the tea bags, cover and leave to steep for approx. 8 mins. Remove the tea bags, leave to cool.
Granita
Add the lime zest and juice, mix well. Pour the mixture into a wide, shallow stainless steel bowl, cover and freeze for approx. 4 hrs. Scrape out the granita with a fork until grainy, cover and freeze for a further 2 hours.
To serve
Scrape out the granita once again, divide between the pre-chilled glasses. Top with the yoghurt, garnish with the mint.
