Braised miso kohlrabi
Ingredients
for 4 person
| 4 | kohlrabi (each approx. 400 g), peeled |
| 2 tbsp | rice vinegar |
| 2 tbsp | peanut oil |
| 2 tbsp | miso paste |
| 1 tbsp | peanut oil |
| 20 g | panko breadcrumbs |
| 2 pinch | salt |
| 200 g | sour single cream |
| 2 tbsp | rice vinegar |
| 1 tbsp | liquid honey |
| ½ tsp | salt |
| a little | pepper |
| 2 tsp | chilli oil |
How it's done
Kohlrabi
Place the kohlrabi on a baking tray lined with baking paper. Combine the vinegar, oil and miso paste in a small bowl, brush the kohlrabi with the mixture.
To cook
Approx. 1½ hrs. in the lower half of an oven preheated to 200 °C.
Panko breadcrumbs
Heat the oil in a frying pan. Add the panko breadcrumbs, toast for approx. 4 mins., season with salt, set aside.
Sauce
Mix the sour single cream, vinegar and honey in a small bowl, season.
To serve
Spread the sauce on the plates, serve the kohlrabi on top. Drizzle with the chilli oil, sprinkle with the reserved panko.
