How it's done
Dough
In a bowl, mix the flour with all the other ingredients up to and including the salt. Add the butter and rub together using your hands to form an even, crumbly mixture. Pour in the milk and mix quickly to form a soft dough – do not knead.
Scones
On a lightly floured surface, roll out the dough to approx. 2 cm thick, cut out circles using a fluted cutter (approx. 4 cm in diameter). Place the scones on a baking tray lined with baking paper, brush with a little milk, sprinkle with poppy seeds.
To bake
Approx. 20 mins. in the centre of an oven preheated to 200 °C. Remove, allow to cool slightly on a rack.
Plums
Mix the plums, sugar and water in a pan. Cover and simmer over a low heat for approx. 15 mins. until soft, allow to cool slightly.
To serve
Slice the scones crosswise, plate up with the cream cheese and plums.
