Flank steaks with bacon & bean salad
Ingredients
for 4 person
| 2 | flank Steak (each approx. 230 g) |
| 80 g | butter, soft |
| 1 tbsp | soy sauce |
| 1 tbsp | sesame seeds |
| ¼ tsp | salt |
| 250 g | green beans |
| salted water, boiling |
| 120 g | bacon strips, cut into strips |
| 1 | shallot, cut into strips |
| 3 tbsp | balsamic vinegar |
| 1 tbsp | olive oil |
| ¾ tsp | salt |
| a little | pepper |
| ¼ tsp | salt |
| a little | pepper |
How it's done
To prepare
Take the meat out of the fridge approx. 30 mins. prior to grilling.
Sesame butter
Using the whisk on a mixer, beat the butter for approx. 2 mins. until light and creamy. Add the soy sauce, continue to mix. Add the sesame and salt, mix in, set aside.
Beans
Cook the beans in simmering salted water for approx. 10 mins. until just soft, drain, rinse with cold water.
Charcoal/gas/electric grill
Mix the bacon and shallot in the grill tray. With the lid down, grill over/on a medium heat (approx. 200 °C) for approx. 6 mins., turning occasionally. Pour in the balsamic, mix, reduce a little, remove from the grill. Brush the meat with oil, season, grill for approx. 2 mins. on each side. Remove the meat from the grill, wrap tightly in foil, leave to rest for approx. 5 mins.
To serve
Mix the beans with the bacon, season, carve the meat, plate up. Serve with the sesame butter.
