Tofu and nectarine sandwiches
Ingredients
for 4 person
| 4 tbsp | soy sauce |
| 2 tbsp | mirin (rice wine) |
| 1 | garlic clove, squeezed |
| 380 g | smoked tofu, cut into slices approx. 5 mm thick |
| 2 | nectarines, cut in slices of 5 mm |
| ½ tbsp | olive oil |
| 1 tsp | sambal oelek |
| 4 | bread rolls (approx. 80 g each) |
| 80 g | mayonnaise |
| 50 g | rocket |
How it's done
Tofu
Mix the soy sauce, mirin and garlic in the grill tray. Add the tofu, coat with the marinade.
Charcoal/gas/electric grill
With the lid down, grill the tofu over/on a medium heat (approx. 200 °C) for approx. 10 mins. Turn the tofu from time to time. Place the oil and sambal oelek in a small bowl, brush the nectarines with the mixture, grill alongside for approx. 2 mins on each side. Cut open the bread rolls, grill alongside for approx. 2 mins.
Sandwiches
Spread the mayonnaise over the bottom half of the rolls. Add the rocket, tofu and nectarines, then cover with the top half of the rolls.
