Cabbage and carrot salad with sesame dressing
Ingredients
for 4 people
| 50 g | sesame seeds |
| ½ dl | soy sauce |
| 3 tbsp | rice vinegar |
| 3 tbsp | water |
| 3 tbsp | lime juice |
| 1 tbsp | liquid honey |
| 200 g | red cabbage, cut into thin slices |
| 200 g | carrots, cut into thin slices |
| 1 | cucumber, cut into thin slices |
| ½ | iceberg lettuce, thinly sliced |
| 1 bunch | coriander, finely chopped |
| a little | chilli flakes |
How it's done
Dressing
Place the sesame in a food processor along with all the other ingredients up to and including the honey, puree until smooth, transfer to a bowl.
Salad
Add the red cabbage and carrots to the dressing, massage well by hand for approx. 2 mins. Add the cucumber, lettuce and coriander, mix in. Serve the salad on a platter, sprinkle with chilli flakes.
