Kofta sandwich
Ingredients
for 4 people
| 400 g | minced meat (beef) |
| 1 | spring onion incl. green part, cut into thin rings, greens set aside |
| 2 | garlic cloves, finely chopped |
| 1 | egg |
| 50 g | breadcrumbs |
| ½ bunch | flat-leaf parsley, finely chopped |
| ½ tsp | ground cumin |
| ¼ tsp | cinnamon |
| ½ tsp | salt |
| a little | pepper |
| 1 tbsp | olive oil |
| ½ | red onion, halved, cut into strips |
| ½ bunch | flat-leaf parsley, finely chopped |
| ½ bunch | dill, finely chopped |
| 2 tbsp | olive oil |
| 2 tbsp | lemon juice |
| 2 pinch | sugar |
| ¼ tsp | salt |
| 180 g | plain yoghurt |
| ½ bunch | dill, finely chopped |
| 2 pinch | salt |
| 4 | mini-baguettes (each approx. 120 g), halved lengthwise |
How it's done
Koftas
In a bowl, mix the mince with all the other ingredients up to and including the pepper. Knead well by hand until the ingredients form a compact mass. With wet hands, divide the mixture into 12 portions, shape into ovals, flatten a little.
To fry
Heat the oil in a non-stick frying pan. Add the koftas, reduce the heat, fry for approx. 6 mins. on each side.
Onion salad
Place the onion and all the other ingredients up to and including the salt in a bowl along with the reserved spring onion greens, mix.
Sandwich
Mix the yoghurt, dill and salt in a small bowl, spread over the cut sides of the bread rolls. Fill the rolls with the onion salad and koftas.
