Asparagus with peanuts and dates

Ingredients

for 4 person

Asparagus
1 tbsp olive oil
250 g thin green asparagus
¼ tsp salt
Dressing
lime, 2 tbsp juice
1 tbsp rice vinegar
1 tbsp olive oil
1 ½ tbsp peanut butter
1 tbsp soy sauce
1 tsp hot mustard
½ tbsp sugar
½  garlic clove, coarsely chopped
¼ tsp salt
a little  pepper
To serve
40 g salted, roasted peanuts, coarsely chopped
40 g dates, quartered lengthwise
3 sprig basil, leaves torn off

How it's done

Asparagus

Heat the oil in a non-stick frying pan. Add the asparagus, stir fry for approx. 2 mins., season with salt, serve on a platter.

Dressing

Place the lime juice in a measuring cup along with all the other ingredients up to and including the pepper, puree.

To serve

Drizzle the dressing over the asparagus. Top with the peanuts, dates and basil.
