Asparagus with peanuts and dates
Ingredients
for 4 person
| 1 tbsp | olive oil |
| 250 g | thin green asparagus |
| ¼ tsp | salt |
| 1 | lime, 2 tbsp juice |
| 1 tbsp | rice vinegar |
| 1 tbsp | olive oil |
| 1 ½ tbsp | peanut butter |
| 1 tbsp | soy sauce |
| 1 tsp | hot mustard |
| ½ tbsp | sugar |
| ½ | garlic clove, coarsely chopped |
| ¼ tsp | salt |
| a little | pepper |
| 40 g | salted, roasted peanuts, coarsely chopped |
| 40 g | dates, quartered lengthwise |
| 3 sprig | basil, leaves torn off |
How it's done
Asparagus
Heat the oil in a non-stick frying pan. Add the asparagus, stir fry for approx. 2 mins., season with salt, serve on a platter.
Dressing
Place the lime juice in a measuring cup along with all the other ingredients up to and including the pepper, puree.
To serve
Drizzle the dressing over the asparagus. Top with the peanuts, dates and basil.
