Asparagus with spinach and giant white beans
Ingredients
for 2 person
| 40 g | butter |
| 250 g | white asparagus X |
| 1 | garlic clove, sliced |
| 1 tsp | sugar |
| ¾ tsp | salt |
| a little | pepper |
| 3 tbsp | water |
| 1 tin | giant white bean (approx. 400 g), rinsed, drained |
| 100 g | baby spinach |
| 1 | organic lemon, grated zest and 2 tbsp of juice |
How it's done
Heat the butter in a pan. Add the asparagus and all the other ingredients up to and including the pepper, sauté for approx. 3 mins. Add the water, bring to the boil. Reduce the heat, add the beans and spinach, mix, heat through. Add the lemon zest and juice, mix, serve.
