Lentil salad with radishes
Ingredients
for 2 person
| 100 g | red lentils |
| 6 dl | water |
| ½ tsp | salt |
| 1 ½ tbsp | tahini (sesame paste) |
| 2 tbsp | lemon juice |
| 1 tbsp | olive oil |
| 2 tbsp | water |
| ½ tsp | Sriracha sauce |
| ¼ tsp | salt |
| ½ bunch | radish, sliced |
| ½ bunch | peppermint, finely chopped |
How it's done
Lentils
Place the water and lentils in a pan, bring to the boil, simmer uncovered over a low heat for approx. 7 mins. until just soft. Drain the lentils, season with salt.
Dressing
In a large bowl, mix the tahini with all the other ingredients up to and including the salt.
Salad
Add the radishes, mint and lentils to the dressing, mix.
