Grilled pork fillet with zhoug sauce
Ingredients
for 4 person
| 1 | pork fillet (approx. 500 g) |
| 2 bunch | coriander, roughly chopped |
| 1 | green chilli, deseeded, roughly chopped |
| 2 | garlic cloves, coarsely chopped |
| ¾ dl | olive oil |
| 1 tsp | ground cardamom |
| ½ tsp | ground cumin |
| ¼ tsp | salt |
| 1 tbsp | olive oil |
| ½ tsp | salt |
How it's done
To prepare
Take the meat out of the fridge approx. 30 mins. prior to grilling.
Sauce
Place the coriander in a measuring cup along with all the other ingredients up to and including the salt, puree briefly.
Charcoal/gas/electric grill
Brush the fillet with oil and season with salt. With the lid down, grill over/on a medium heat (approx. 200 °C) for approx. 15 mins. all over. Remove the fillet from the grill, wrap tightly in foil and leave to rest for approx. 5 mins. Carve the fillet, serve with the sauce.
