Potato Caesar salad
Ingredients
for 4 person
| 1 kg | baby potato, quartered lengthwise |
| 2 ½ tbsp | olive oil |
| 1 tsp | sweet paprika |
| 1 tsp | salt |
| 100 g | chorizo, cut into cubes |
| 180 g | plain yoghurt |
| 60 g | mayonnaise |
| 2 tbsp | grated Parmesan |
| 1 | garlic clove, squeezed |
| ½ tsp | Worcestershire sauce |
| ¼ tsp | pepper |
| 2 | baby lettuce, cut into strips approx. 2 cm wide |
How it's done
Potatoes
Place the potatoes, oil, paprika and salt in the grill tray, mix.
Charcoal/gas/electric grill
With the lid down, grill the potatoes over/on a medium heat (approx. 200 °C) for approx. 25 mins., mixing occasionally. Add the chorizo, grill for approx. 10 mins. Remove the potatoes from the grill, allow to cool slightly.
Dressing
Place the yoghurt in a bowl along with all the other ingredients up to and including the pepper, mix well.
To serve
Add the lettuce and potatoes to the dressing, mix.
