Sesame-crusted feta with kale
Ingredients
for 4 people
| 2 tbsp | white flour |
| 1 | egg |
| 2 tbsp | panko breadcrumbs |
| 2 tbsp | sesame seeds |
| 400 g | feta, cut in half |
| 2 tbsp | olive oil |
| olive oil for frying | |
| 400 g | washed, prepared kale |
| ¼ tsp | ground cumin |
| ¼ tsp | cinnamon |
| 5 tbsp | rice vinegar |
| 1 ½ tbsp | miso paste |
| 3 tbsp | sesame oil |
| 1 tbsp | water |
| 50 g | pomegranate seeds |
How it's done
Feta
Empty the flour into a shallow dish. Beat the egg in a deep dish. Mix the breadcrumbs and sesame seeds in a deep dish. Coat the feta in the flour, then in the egg, and finally in the sesame mixture. Heat the oil in a non-stick frying pan. Reduce the heat, add the feta, fry for approx. 3 mins. on each side. Remove and set aside.
Kale
Heat a dash of oil in the same frying pan. Add the kale in batches, sauté for approx. 3 mins. each, season.
Dressing
Place the vinegar in a bowl along with all the other ingredients up to and including the water, mix well. Add the kale and pomegranate seeds, mix, plate up. Top with the feta.
