Curry noodles with mince

Ingredients

for 4 people

Noodles
1 tbsp olive oil
2 cm ginger, finely grated
garlic clove, squeezed
1 ½ tbsp hot curry powder
1 ½ tbsp tomato puree
2 ½ dl coconut milk
8 dl beef bouillon
250 g ramen noodles
Mince
1 tbsp olive oil
400 g minced meat (beef)
2 tbsp soy sauce
1 tbsp mirin (rice wine)
To serve
spring onion incl. green part, cut into thin rings
60 g cashew nuts, roasted

How it's done

Noodles

Heat the oil in a pan. Add the ginger, garlic, curry and tomato puree, sauté for approx. 3 mins. Pour in the coconut milk and stock, bring to the boil. Add the ramen noodles, reduce the heat, cook for approx. 5 mins. until al dente.

Mince

Heat the oil in a frying pan. Add the mince, fry for approx. 5 mins. Add the soy sauce and mirin, mix.

To serve

Serve the noodles and sauce in deep plates. Top with the mince, spring onions and cashew nuts.
