Curry noodles with mince
Ingredients
for 4 people
| 1 tbsp | olive oil |
| 2 cm | ginger, finely grated |
| 1 | garlic clove, squeezed |
| 1 ½ tbsp | hot curry powder |
| 1 ½ tbsp | tomato puree |
| 2 ½ dl | coconut milk |
| 8 dl | beef bouillon |
| 250 g | ramen noodles |
| 1 tbsp | olive oil |
| 400 g | minced meat (beef) |
| 2 tbsp | soy sauce |
| 1 tbsp | mirin (rice wine) |
| 1 | spring onion incl. green part, cut into thin rings |
| 60 g | cashew nuts, roasted |
How it's done
Noodles
Heat the oil in a pan. Add the ginger, garlic, curry and tomato puree, sauté for approx. 3 mins. Pour in the coconut milk and stock, bring to the boil. Add the ramen noodles, reduce the heat, cook for approx. 5 mins. until al dente.
Mince
Heat the oil in a frying pan. Add the mince, fry for approx. 5 mins. Add the soy sauce and mirin, mix.
To serve
Serve the noodles and sauce in deep plates. Top with the mince, spring onions and cashew nuts.
