Salmon with apricots and chervil
Ingredients
for 4 person
| 3 tbsp | red wine vinegar |
| 3 tbsp | olive oil |
| 2 tbsp | soy sauce |
| 1 | red onion, cut into thin rings |
| 4 | salmon fillet (organic) (each approx. 150 g) |
| 500 g | apricots, halved, pitted |
| 1 | organic lemon, thinly sliced |
| 1 tbsp | olive oil |
| ½ tsp | salt |
| 1 bunch | chervil, torn into pieces |
| a little | pepper |
How it's done
Sauce
Whisk the vinegar, oil and soy sauce in a bowl. Add the onion, mix.
Salmon and apricots
Spread the salmon, apricots and lemon slices on a baking tray lined with baking paper, brush with oil, season with salt.
To bake
Approx. 15 mins. in the upper half of an oven preheated to 220 °C. Remove from the oven, add the apricots and lemon slices to the sauce, mix.
To serve
Add half of the chervil to the sauce, season. Plate up the salmon with the sauce, garnish with the remainder of the chervil.
