Peanut protein bars
Ingredients
for 6 pieces
| 4 tbsp | vegan protein powder (e.g. Qualité & Prix) |
| 2 tbsp | ground cane sugar |
| 100 g | peanut butter |
| 40 g | salted, roasted peanuts |
| 1 ½ tbsp | finely-ground instant coffee |
| 1 tbsp | water, hot |
| 50 g | dark chocolate, finely chopped |
| 2 pinch | sea salt |
How it's done
Peanut mixture
Place the protein powder in a bowl along with all the other ingredients up to and including the peanuts, knead by hand to form a compact mass. Mix the coffee powder and water until the coffee has dissolved. Transfer the peanut mixture to the prepared tin, press down firmly.
To shape
Place the chocolate in a thin-sided bowl and suspend over a gently simmering bain-marie, ensuring that the bowl does not touch the water. Melt the chocolate, stir until smooth, spread on top of the peanut mixture. Sprinkle with the fleur de sel, cover and leave to set in the fridge for at least 2 hrs.
Bars
Turn the mixture out onto a chopping board, cut into 6 bars using a bread knife.
