Courgettes with hemp seeds
Ingredients
for 4 person
| olive oil for frying | |
| 250 g | courgettes, cut into slices approx. 5 mm thick |
| ¼ tsp | salt |
| a little | pepper |
| 2 tbsp | olive oil |
| 1 | organic lemon, grated zest and 2 tbsp of juice |
| ¼ tsp | salt |
| 100 g | Tête de Moine rosettes |
| 2 tbsp | Hemp seeds |
| 3 sprig | dill, roughly chopped |
How it's done
Courgettes
Heat a dash of oil in a non-stick frying pan. Add the courgettes in batches, fry for approx. 30 secs. on each side. Remove, season.
Dressing
Place the oil and all the other ingredients up to and including the salt in a small bowl, mix well.
To serve
Serve the cheese and courgettes on a platter, drizzle with the dressing. Top with the hemp seeds and dill.
