Courgettes with hemp seeds

Ingredients

for 4 person

Courgettes
  olive oil for frying
250 g courgettes, cut into slices approx. 5 mm thick
¼ tsp salt
a little  pepper
Dressing
2 tbsp olive oil
organic lemon, grated zest and 2 tbsp of juice
¼ tsp salt
To serve
100 g Tête de Moine rosettes
2 tbsp Hemp seeds
3 sprig dill, roughly chopped

How it's done

Courgettes

Heat a dash of oil in a non-stick frying pan. Add the courgettes in batches, fry for approx. 30 secs. on each side. Remove, season.

Dressing

Place the oil and all the other ingredients up to and including the salt in a small bowl, mix well.

To serve

Serve the cheese and courgettes on a platter, drizzle with the dressing. Top with the hemp seeds and dill.
