Tofu brûlée

Ingredients

for 4 people

Syrup
3 dl water
300 g sugar
vanilla pod, cut lenghtwise, seeds scratched out
Tofu
500 g Karma Bio Seidentofu, halved lengthwise
To serve
tangerines x
2 tbsp sugar

How it's done

Syrup

Mix the water and sugar in a pan, bring to the boil. Reduce the heat, add the vanilla pod and seeds, and simmer for about 5 mins. Let the syrup cool slightly.

Tofu

Place the tofu in the tin. Pour the syrup over, leave to cool, then cover and leave to infuse in the fridge for approx. 8 hrs or overnight.

To serve

Remove the tofu from the syrup and pat dry. Spoon 2 tbsp of syrup onto each plate, arrange the mandarins and tofu on top. Sprinkle the sugar over the tofu, caramelize with the Bunsen burner flame, serve.
