Avocado breakfast mousse

Fancy something different in the morning? This avocado recipe is full of surprises – low in sugar, high in protein and wonderfully creamy. Prepared in just a few minutes, it's not only nourishing and filling, but it's also a fresh and delicious way to start your day.

Ingredients

for 4 portions

Mousse
ripe avocados, cut into pieces
4 tbsp plain vegan yoghurt substitute
2 tbsp almond drink
2 tbsp vegan protein powder
2 tbsp maple syrup
1 tbsp lemon juice
Topping
4 tbsp vegan plain yoghurt substitute
4 tbsp müesli mix

How it's done

Mousse

Place the avocado in a blender along with all the other ingredients up to and including the lemon juice. Place the lid on, remove the lid insert and puree for 2 mins. until smooth. Pour the mixture into glasses or small bowls, cover and leave to set in the fridge for approx. 2 hrs.

Topping

Top the mousse with the yoghurt substitute and muesli.
