Avocado breakfast mousse
Ingredients
for 4 portions
| 2 | ripe avocados, cut into pieces |
| 4 tbsp | plain vegan yoghurt substitute |
| 2 tbsp | almond drink |
| 2 tbsp | vegan protein powder |
| 2 tbsp | maple syrup |
| 1 tbsp | lemon juice |
| 4 tbsp | vegan plain yoghurt substitute |
| 4 tbsp | müesli mix |
How it's done
Mousse
Place the avocado in a blender along with all the other ingredients up to and including the lemon juice. Place the lid on, remove the lid insert and puree for 2 mins. until smooth. Pour the mixture into glasses or small bowls, cover and leave to set in the fridge for approx. 2 hrs.
Topping
Top the mousse with the yoghurt substitute and muesli.
