Sweet potatoes from the oven with steaks
Ingredients
for 4 people
| 1 kg | sweet potato, peeled, cut into slices approx. 3 cm thick |
| 3 dl | vegetable bouillon, hot |
| 60 g | grated Parmesan |
| 1 tbsp | butter |
| 1 | onion, finely chopped |
| 1 | garlic clove, finely chopped |
| 500 g | savoy cabbage, cut into thin slices |
| 2 dl | single cream for sauces |
| 1 | organic lemon, use a little grated zest |
| 4 sprig | thyme, leaves torn off |
| ¾ tsp | salt |
| a little | pepper |
| 1 tbsp | olive oil |
| 600 g | sirloin steaks |
| 1 tsp | salt |
| a little | pepper |
How it's done
Sweet potatoes
Place the sweet potatoes in the prepared dish. Pour the stock over, sprinkle the cheese on top.
To bake
Approx. 35 mins. in the centre of an oven preheated to 220 °C.
Savoy cabbage
Heat the butter in a wide pan. Add the onion, garlic and savoy cabbage, sauté for approx. 8 mins. Add the single cream for sauces, lemon zest and thyme, mix, heat up, season.
Meat
Heat the oil in a wide frying pan. Add the meat, fry for approx. 3 mins. on each side, season. Slice the steaks and arrange them with the sweet potatoes and savoy cabbage.
