Cucumber and chicken salad with peanut dressing

Ingredients

for 4 people

Chicken
1 tbsp olive oil
chicken breasts (approx. 500 g)
½ tsp salt
a little  pepper
Dressing
1 ½ tbsp peanut butter
2 ½ tbsp soy sauce
1 ½ tbsp rice vinegar
garlic clove, squeezed
2 tbsp liquid honey
2 tsp sesame seeds
Salad
cucumbers , cut into approx. 3 mm slices
  salt and pepper to taste

How it's done

Chicken

Heat the oil in a non-stick frying pan, season the chicken, fry for approx. 8 mins. on each side. Remove, leave to cool.

Dressing

Place the peanut butter in a bowl along with all the other ingredients up to and including the sesame, mix well.

Salad

Pull apart the cooled chicken using two forks, add the chicken to the bowl with the dressing, add the cucumbers, mix, season.
