Salmon with lemon butter
Ingredients
for 2 people
| 1 tbsp | olive oil |
| 2 | salmon fillets without skin, approx. 140 g each |
| ¼ tsp | salt |
| 2 tbsp | butter |
| 1 | garlic clove, squeezed |
| 1 tbsp | thyme leaf |
| 1 | organic lemon, grated zest and 2 tbsp of juice |
| 2 pinch | salt |
| a little | pepper |
How it's done
Salmon
Heat the oil in a non-stick frying pan. Reduce the heat, season the salmon fillets with salt, add them, and fry over a medium heat for approx 5 mins. Turn the salmon fillets and fry for a further 3 mins. Remove.
Lemon butter
Place the butter and garlic in a pan, heat until the butter foams and smells nutty. Add the thyme and all the other ingredients up to and including the pepper, mix. Return the salmon to the pan, heat gently and serve.
