Pulled chicken with noodles

Ingredients

for 4 people

Chicken
1 tbsp olive oil
garlic cloves, finely chopped
onion, finely chopped
1 cm ginger, finely grated
8 dl chicken bouillon
5 dl coconut milk
chicken breasts (each approx. 150 g)
250 g ramen noodles
  salt and pepper to taste
1 bunch coriander, finely chopped
1 tsp black sesame seeds
1 tsp chilli flakes
organic lime, cut into wedges

How it's done

Chicken

Heat the oil in a pan. Add the garlic, onion and ginger, sauté for approx. 2 mins. Pour in the stock and coconut milk, bring to the boil. Reduce the heat, add the chicken, cover and simmer over a low heat for approx. 12 mins. Place the chicken in a bowl, allow to cool slightly. Add the noodles to the pan, cook for approx. 4 mins., season.

Pull apart the chicken using two forks. Serve the noodles and sauce in soup dishes. Arrange the chicken on top. Garnish with the coriander and sesame seeds, serve with lime wedges.
