Gnocchi Cacio e Pepe
Ingredients
for 2 people
| 500 g | potato gnocchi |
| water, boiling |
| ½ tsp | peppercorn |
| 100 g | Pecorino romano, finely grated |
| 1 tbsp | olive oil |
| salt to taste |
How it's done
Gnocchi
Cook the gnocchi in batches in simmering salted water for approx. 5 mins. until they float to the surface. Drain the gnocchi, reserving approx. 1 dl of the cooking water.
Sauce
Crush the peppercorns in a mortar or with the bottom of a pan, then roast them in a warm pan without any fat for about 2 mins. Place the cheese and oil with the reserved cooking water in a measuring jug, blend, add to the pan with the gnocchi and pepper, mix, heat through, season.
