Chai Collins
Ingredients
for 1 person
| 1 ½ dl | water |
| 2 bag | Chai Tea |
| 80 g | sugar |
| some | ice cubes |
| 4 cl | non-alcoholic gin |
| 2 cl | lemon juice |
| 1 dl | sparkling mineral water |
| 1 | star anise |
| 1 slice | organic lemon, cut in half |
How it's done
Chai syrup
Bring the water to the boil in a pan. Remove the pan from the heat, add the tea bags, cover and leave to steep for approx. 10 mins. Remove the teabags. Add the sugar to the tea, bring to the boil, reduce to a syrupy consistency for approx. 8 mins. (yields approx. 100 ml). Leave the syrup to cool.
Mocktail
Place several ice cubes in the glass. Add the gin, lemon juice and 1½ tbsp chai syrup, stir. Set aside the remainder of the syrup (see tip). Top up with mineral water.
To serve
Decorate the mocktail with star anise and a slice of lemon.
