Vegan protein coffee cookies
Ingredients
for 14 pieces
| 200 g | vegan butter substitute, soft |
| 100 g | ground cane sugar |
| 50 g | apple sauce |
| 1 pinch | salt |
| 2 tsp | instant coffee |
| 1 tsp | water, hot |
| 150 g | white flour |
| 100 g | vegan protein powder (e.g. High Protein Vegan Neutral) |
| 1 tsp | baking powder |
| ½ tsp | sodium bicarbonate |
| 80 g | chocolate cubes |
How it's done
Dough
Place the butter substitute, sugar, apple sauce and salt in a bowl, mix using the whisk on a mixer. Dissolve the coffee powder in water, add, mix.
Combine the flour, protein powder, baking powder and bicarbonate of soda, add together with the chocolate chunks, combine to form a soft dough – do not knead.
To shape
Scoop the dough using an ice cream scoop, place on a baking tray lined with baking paper, flatten slightly.
To bake
Approx. 12 mins. in the centre of an oven preheated to 180 °C. Remove from the oven, allow to cool slightly, leave to cool completely on a rack.
