Falafel and spinach salad
Ingredients
for 4 people
| 2 tbsp | fig mustard |
| 2 tbsp | apple vinegar |
| 2 tbsp | olive oil |
| ¼ tsp | salt |
| a little | pepper |
| 1 tbsp | olive oil |
| 200 g | falafels |
| 150 g | baby spinach |
| 100 g | pomegranate seeds |
How it's done
Dressing
Place the mustard in a bowl along with all the other ingredients up to and including the pepper, mix well.
Falafel
Heat the oil in a non-stick frying pan. Reduce the heat, add the falafel, fry for approx. 10 mins. all over.
Salad
Add the spinach and pomegranate seeds to the dressing, mix, serve on a platter and top with the falafel.
