Courgette lasagne with feta

If you love pasta and courgettes but fancy a lasagne, we've got the perfect recipe for you. Rocket and grated lemon zest add a fresh kick, while cottage cheese and feta create the perfect cheese combination. You must give it a try!

Ingredients

for 4 people

Cheese sauce
250 g plain cottage cheese
250 g feta, crumbled
30 g rocket
organic lemon, use grated zest
Cherry tomatoes
1 tbsp olive oil
500 g cherry tomatoes, cut in half
¼ tsp salt
Lasagne
300 g courgettes cut lengthwise into approx. 3 mm slices
rolls of pasta dough
To bake
150 g burrata, torn into pieces
a little  pepper

How it's done

Cheese sauce

Melt the cottage cheese and feta in a pan. Remove the pan from the hob, add the rocket and lemon zest, mix.

Cherry tomatoes

Heat the oil in a non-stick frying pan, add the cherry tomatoes, stir-fry for approx. 3 mins., season with salt.

Lasagne

Layer the cheese sauce, courgettes, cherry tomatoes and lasagne sheets alternately in the prepared dish. Finish with the courgettes.

To bake

Approx. 15 mins. in the centre of an oven preheated to 200 °C. Remove the lasagne and leave to stand for approx. 5 mins. Top with the burrata, season.
