Courgette lasagne with feta
Ingredients
for 4 people
| 250 g | plain cottage cheese |
| 250 g | feta, crumbled |
| 30 g | rocket |
| 1 | organic lemon, use grated zest |
| 1 tbsp | olive oil |
| 500 g | cherry tomatoes, cut in half |
| ¼ tsp | salt |
| 300 g | courgettes cut lengthwise into approx. 3 mm slices |
| 6 | rolls of pasta dough |
| 150 g | burrata, torn into pieces |
| a little | pepper |
How it's done
Cheese sauce
Melt the cottage cheese and feta in a pan. Remove the pan from the hob, add the rocket and lemon zest, mix.
Cherry tomatoes
Heat the oil in a non-stick frying pan, add the cherry tomatoes, stir-fry for approx. 3 mins., season with salt.
Lasagne
Layer the cheese sauce, courgettes, cherry tomatoes and lasagne sheets alternately in the prepared dish. Finish with the courgettes.
To bake
Approx. 15 mins. in the centre of an oven preheated to 200 °C. Remove the lasagne and leave to stand for approx. 5 mins. Top with the burrata, season.
