These delicious lemon brownies combine the melt-in-the-mouth texture of a brownie with the refreshing flavour of a lemon cake. They are quick and easy to make, and you'll only need one bowl. Let's get started!

Ingredients

for 16 pieces

Batter
180 g sugar
eggs
organic lemons, grated zest and 3 tbsp of juice
120 g butter, melted, left to cool
120 g white flour
¼ tsp baking powder
Icing
80 g icing sugar
1 ½ tbsp lemon juice
½ tsp vanilla paste

How it's done

Batter

Place the sugar, eggs, lemon zest and juice in a bowl, beat until light and foamy using the whisk on a mixer. Add the butter, mix. Combine the flour and baking powder, mix into the batter, transfer to the prepared tin.

To bake

Approx. 25 mins. in the lower half of an oven preheated to 180 °C. Remove from the oven, allow the brownies to cool slightly in the tin, remove from the tin, place on a cooling rack with the baking paper and leave to cool.

Icing

Mix the icing sugar, lemon juice and vanilla paste in a small bowl, spread on top of the brownie, cut into slices.
