Chamomile Gin Sour

Ingredients

for 1 person

Chamomile syrup
1 ½ dl water
50 g sugar
3 bag camomile tea
Cocktail
4 cl gin
1 ½ tbsp lemon juice
fresh egg white
some  ice cubes

How it's done

Chamomile syrup

Bring the water and sugar to the boil in a pan. Remove the pan from the heat, add the tea bags, cover and leave to steep for approx. 8 mins. Remove the tea bags, allow the syrup to cool (yields approx. 1 ½ dl).

Cocktail

Put the gin, lemon juice and egg white into the shaker with 4 tablespoons of chamomile syrup, top up with a few ice cubes, and shake well for about 30 seconds. Pour the cocktail through a fine sieve into the glass.
