Bifteki (Greek baked beef patties with tzatziki)
Ingredients
for 4 people
| 1 | cucumber, halved lengthwise, deseeded, roughly grated |
| ½ tsp | salt |
| 200 g | plain yoghurt |
| 1 | garlic clove, squeezed |
| 1 tbsp | olive oil |
| ½ tbsp | lemon juice |
| 2 sprig | dill, finely chopped |
| 60 g | bread day-old |
| 6 tbsp | milk |
| 500 g | minced meat (beef) |
| 1 | onion, finely chopped |
| 1 | garlic, finely chopped |
| 1 | egg |
| 2 sprig | peppermint, finely chopped |
| 2 sprig | parsley, finely chopped |
| 1 tsp | dried oregano |
| 2 tbsp | olive oil |
| 1 tbsp | red wine vinegar |
| 1 tsp | salt |
| a little | pepper |
| 1 tbsp | olive oil |
How it's done
Tzatziki
Mix the cucumber and salt in a sieve, leave to absorb for approx. 10 mins. Squeeze the cucumber well to press out the liquid, mix with the yoghurt and all the other ingredients up to and including the dill, chill.
Bread
Place the bread in a bowl, cover with the milk and leave to soak for approx. 15 mins. Squeeze out the bread by hand, set aside.
Bifteki
Place the mince in a bowl along with all the other ingredients up to and including the vinegar, add the reserved bread, season. Knead the mixture thoroughly by hand until you have a compact, sticky mass.
To shape
Divide the mixture into 8 portions, shape into ovals, flatten a little.
Heat the oil in a non-stick frying pan. Add the bifteki, fry for approx. 4 mins. on each side. Remove, serve with the tzatziki.
