Spaetzle raclette with onion and bacon topping
Ingredients
for 6 people
| 2 | red onions, cut into wedges |
| ½ dl | red wine vinegar |
| ½ tsp | yellow mustard seed |
| 1 tbsp | sugar |
| ¼ tsp | salt |
| 500 g | spätzle egg noodles |
| 800 g | raclette cheese in slices |
| 110 g | bacon strips |
| to taste | hot paprika |
How it's done
Onions
Place the onion in a pan along with all the other ingredients up to and including the salt, mix, bring to the boil. Reduce the heat, cover and cook for approx. 5 mins. until just soft, set aside.
Raclette
Place the spaetzle in the raclette pans, top with the cheese, melt under the raclette grill for approx. 8 mins. In the meantime, fry the bacon on the table grill for about 5 mins. Remove the raclette spaetzle, season, and scatter the reserved onions with the bacon on top.
