Muesli with okara granola
Ingredients
for 4 people
| 2 tbsp | instant coffee |
| 1 tsp | water, hot |
| 3 tbsp | maple syrup |
| 3 tbsp | coconut oil |
| 100 | spelt flakes |
| 75 g | Okara (Nice, see note) |
| 60 | hazelnuts, coarsely chopped |
| ¼ tsp | cinnamon |
| 2 pinch | salt |
| 360 g | vegan yoghurt substitute (coconut) |
| 200 g | red grapes, cut in half |
| 2 | figs, thinly sliced |
| a little | maple syrup |
How it's done
Granola
Put the coffee powder and water into a bowl and stir until the coffee has dissolved. In a bowl, mix the maple syrup with all the other ingredients up to and including the salt, spread on a baking tray lined with baking paper.
To bake
Approx. 30 mins. in the centre of an oven preheated to 160 °C, turning 3-4 times. Remove, leave to cool.
Muesli
Arrange the yoghurt in small bowls. Spread grapes, figs and granola on top, drizzle over a little maple syrup.
